Spam & Kimchi Fried Rice with Egg!

Greetings, dear meows!

It’s been a minute, but I’m back at posting and cooking up a storm, even though it’s hot as Hades EVERYWHERE! Not to mention the fact that inflation and the prices of food are just outrageous… And now more than ever we all need to be frugal, adaptable, and creative with how we spend our food dollar and what we make with it that still feels like a bougie meal on a major budget.

This is one of the ways that I take basic, simple ingredients, and turn them into something amazing. A can of spam, cooked rice, eggs, and a few other bits and bobs from the fridge and you have the makings of some delicious fried rice!

I first took my can of SPAM and cut it into nine slices. I diced up 3 of them, and put the rest in the freezer for another day. Spam can be pretty salty so a little goes along way. I sautéed the diced Spam with a quarter of an onion, diced, along with a clove of chopped garlic. Once the Spam was brown and crispy on all sides, I pushed them aside and cracked an egg into the pan and scrambled it on up.

Then I added about 1.4 cup of frozen peas, and a small can of Kimchi that I bought at the store for $1.00! It was a small can, but kimchi packs a ounch and it was the perfect amount for little ol’ me! I briefly sautéed everything together, then added a T. of hoisin sauce, and a splash of soy sauce. That’s just what I had. You use what you have on hand. Then a few drizzles of sesame oil before adding in about 1 1/2 cups of cooked rice.

Mixed everything up and fried the rice until it was a bit crispy. To finish it, I added 1 sliced green onion into the rice and turned off the heat. Now, you could stop right here and enjoy it as it is, but this was made on a Sunday and it was a lovely Mystic Meals brunch for me! So I made an over easy egg (cause I need my egg whites cooked!) and set that baby right on top of that rice! Finished it with a bit of chili crisp, and a shake or two of everything bagel seasoning and she was done!

Doesn’t that look delicious? I can tell you that it absolutely was and I’m definitely making this one again! And I hope you meows try it out and let me know how it turned out! Fried rice is very nice, and as they say…rice is life! Until we eat again, bone grapple beef! Happy Cooking! Meow!
