
Greetings, dear meows!
Well… We made it to December! The final boss level holiday season is upon us and the year is almost over. I don’t know about you meows, but for me, this whole year was the longest/fastest year ever! A milestone one at that for many reasons. I became an author & I turned 50 on November 22nd! Happy to be stepping into a new decade of life while still being the maniac meow that I am. 😛

I love to bake and these Iced Gingerbread Oatmeal Cookies were a great way for me to kick off the Christmas season by combining two of my favorite cookies into one. These flavors blend so well together and the result is a cookie that gives you just the slightest crisp you’d expect from gingersnaps but the oatmeal provides the soft chewiness that’s warm and full of spices without being too sweet. The icing takes care of that… 😉 So here’s le recipe!

Iced Gingerbread Oatmeal Cookies
Makes 18 to 24 cookies
For the dough :
2 c. All Purpose Flour
1 1/2 c. Quick-cooking oats
2 tsp ground ginger
2 tsp ground cinnamon
3/4 tsp salt
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/2 tsp baking powder
1/2 tsp baking soda
1 c. Packed light or dark brown sugar
1/2 c. Granulated sugar
1 c. Melted unsalted butter, slightly cooled
1 large egg plus 1 egg yolk
I Tbs vanilla extract
1/4 c. Molasses
Mix everything together in a bowl and let rest for 10 to 15 minutes in the fridge while you pre-heat your oven to 350 degrees. Roll the dough into little meatball sized shapes and place them on a sheet pan lined with a baking pad, foil, or parchment paper about 2 to 3 inches apart for spreading. Bake for 12 to 17 minutes depending on the size of your cookie dough balls. Once baked, set on a wire rack and cool completely before icing.
For the Icing:
1 1/2 c. Powdered sugar
2 to 3 Tbs milk
1/2 tsp vanilla extract
Mix thoroughly and add more milk little by little if the icing is too thick. I used 3 Tbs.
Then ice as you wish. You can drizzle the icing or lightly stamp them into the icing for that classic iced oatmeal cookie effect.
