
Greetings, dear meows!
Well here we are in the month of March! First quarter of the year is almost under our belts! Speaking of, you’ll definitely need to loosen up that belt buckle cause what I whipped up in the ol’ cauldron last week was food coma inducing but soooo worth it! Let’s jump right into the fire, shall we?

Starting off strong with one of my favorite types of curries. Thai Green Curry anything has my name all over it! Sweet succulent shrimp, vegetables like baby corn, broccoli, peppers and onions with that insanely flavorful and spicy coconut based sauce with tons of white rice was everything! If you’ve never had green curry before, you owe it to yourself to try it!

I absolutely love fennel both raw and cooked. Caramelizing it with onions to create a jammy spread was the proper move! It tasted like French onion soup, only elevated not only by the fennel, but the slight sweetness of the ricotta cheese on that toast ( which I pan toasted with reserved bacon fat ) topped with a salad of shaved fennel and the fronds in a bacon vinaigrette. I know, I know! 😛 So lovely and another must try!

I do enjoy baking quite a bit and with this one the cravings for two different sweet treats collided! Bananas and chocolate are old pals and pairing them this way is another must try. Banana bread combines with cookie dough and then gets sprinkled with a buttery, slightly salty chocolate crumb and dusted with powdered sugar upon completion. Meeeoooow! 😻

This was the K.O. of the week! Chicken & waffles are fairly popular around these crazy parts of the world, and I’m totally here for it! Sometimes you just have to take a recipe or ingredients and add your own unique vibe to it. I just suggest that if you own a waffle maker, you should do some fun culinary exploration with it. Rice, potatoes, muffins, cookies, cornbread! And fried chicken by itself, ANYDAY, but tossed in a yummy honey bbq sauce? Sheesh!

The beauty of cooking is that you have the freedom to create what you want to eat whenever you want regardless of the time of year. Depending on the ingredients at hand, of course. Although she’s more of an Autumn leaning dish, I think something like this is welcome year round. Served warm or tossed with some yummy greens in a salad. It’s a win either way!
