Vegan Coconut Eggnog!

Hello there, meows! Back again with some more holiday madness for you! This latest blog post comes with a bonus… a new video!!! Yay!

My dear friend Burgandi Phoenix and I have been talking about making some YouTube videos together for quite some time now, and with it being the holiday season, the timing couldn’t be more perfect! Her alter ego, Chiquita Bonita is absolutely hilarious and a great match for me to be on screen with! Chiquita has been having a hard time finding some tasty holiday recipes that suit her culinary lifestyle. She can’t eat gluten and dairy products, and has been eating meatless for over a year now.

This is where I step up to the plate ( pun intended 😉) and help her find tasty and easy to prepare counterparts to dishes that normally require all the things she can’t consume, without sacrificing the overall taste and texture.

What better way to start then with that Yuletide classic, Eggnog! Baby steps, right?

We filmed this crazy video together showing how simple, easy, and fun this drink is to prepare and I hope you give this version of it a try. The end result has the same flavor profile and consistency as a classic Eggnog, without losing any of the taste and flavor that goes with it. We used a spiced rum with ours, but you can also use your favorite Brandy or Bourbon, or just leave it non alcoholic, if you prefer…

The recipe also uses raw cashews, which can be omitted, but really does add a creaminess and richness to the drink that makes Eggnog what it’s known for.

We also incorporated a new product in the recipe that Chiquita recently turned me on to, a brand called Lakanto. They have an entire product line of vegan/plant based products and I was pleasantly surprised at how yummy their maple syrup was! I hope you meows check them out!

Vegan Coconut Eggnog – Makes 2 8oz. portions

Ingredients:

1 15-ounce can coconut milk

1/2 cup raw cashews

3 Tbls maple syrup or your favorite sweetener

1/4 tsp ground nutmeg, 1/4 tsp ground cinnamon, or 1/4 tsp pumpkin pie spice ( which I honestly prefer )

1/4 tsp vanilla extract

Ice cubes

1. Take the cashews and soak them in room temperature water for at least an hour or overnight in the refrigerator. This step is optional. You don’t HAVE to do this, but it does help the cashews to blend a lot faster. They’ll break down and end up smooth either way, this step just cuts down the blending time by half.

2. Drain the cashews and add them along with all of the ingredients (except the alcohol and ice) in a blender and blend until creamy and smooth, with no signs of any cashew pieces. Adjust the sweetness to your taste and add some water or additional coconut milk if it seems too thick.

3. Once the mixture is completely blended, pour into glasses with ice and add the desired amount of rum, bourbon, or brandy. Stir together and enjoy!!
