Seafood Paella!

YUM!!

Greetings, dear meows!

With summer in full swing, there are certain dishes that really bring all the feels and combine those food memories that make our hearts sing! Hey! That rhymes… 😛 Anymeow, I was craving risotto, arroz con pollo, and seafood all at the same time. So I figured why not make a groovy seafood paella and combine all of those flavors and textures I was craving? And so I rummaged through the pantry and fridge and had everything I needed to pull it off. I made a groovy video tutorial and posted it on all of my socials. It came together rather quickly and was absolutely flavorful and delicious. Here’s what I used…

I used Calrose rice in place of Aborio to start. Cause that’s what I had, and the end result is pretty similar. I sautéed some diced onions, garlic, bell peppers, and some fresh diced tomatoes with some olive oil and butter. I added in 1/2 cup of the rice and lightly toasted it with the vegetables, added a bit of my Mystic Seasonings Adobo and Sazon spice blends, a splash of liquid saffron I was gifted, and deglazed it with some water. I then added in some mussels and shrimp and arranged them nicely, and topped it off with a 1/4 cup of frozen peas. Covered it and let it cook until the liquid was absorbed and then watched it closely to create a crispy, but not burnt bottom to the rice. Almost caramelized. I garnished the paella with some chopped green onions and stuffed my face!
