Strawberry and Brie Empanadas!

Greetings, dear meows!

We are right on the verge of summer here in SoCal and the abundance of fruit and vegetables can be seen everywhere! Especially when it comes to berries! It’s quite inspiring and I wanted to take advantage and make something sweet and savory.

Prices at the markets are finally leveling out a bit and strawberries are being sold in bulk at great prices. So I opted to make a strawberry pan jam to use on toast, waffles, etc… But then while shopping I spotted some puff pastry empanada dough and thought, why not make some breakfast pastries with Strawberries and Brie cheese?

And so I used that strawberry pan jam, which is totally gone now to my dismay, to make strawberry and brie empanadas! I made a video tutorial showing how I made both the jam and the pastries so click below to watch!

Saying that these suckers were delicious is an understatement! I love pairing strawberries and cheese, and brie goes nicely with them. But you could use any type of cheese you like with this recipe. That ready made cheesecake batter would be insane in this. And my method for making the pan jam works on practically any fruit as long as you pay close attention to it while it cooks down.
