
Hello there, dear meows! To say that it’s been a while is an understatement! I’ve been busy cooking, working on a few projects, and gearing up for a big move! All great things, but admittedly had me distracted from blogging.
I have quite the backlog of recipes, vids, and pics to share and since we’re right on the cusp of Summer, I figured that I’d start here with this beautiful and easy salad.

I absolutely love incorporating different and unexpected ingredients together. Aside from it still being peak Cherry season, other stone fruits are starting to take center stage. When I saw these gorgeously ripe Apricots at the market, I knew exactly what I wanted to prepare with them.

This salad is really simple and easy. It packs a nutrient rich punch, and surprisingly doesn’t require much salt. However, it is by no means lacking in flavor! The two ingredients that really bring this together is the use of Balsamic Vinegar, and Feta Cheese.

This brand of Balsamic is a bit on the pricier side ( I paid 7.99 ) but it’s totally worth it. It’s thicker and has a more syrupy consistency than most vinegars which lends itself well to be drizzled over a Caprese Salad, or yummy steak because of its concentrated flavor and sweetness. So if you see this out in the wild, grab it! Or simply make a reduction of your own. Back to the Apricots…

I used a few leaves of Butter Lettuce as the base, along with some Watercress, which I picked off the stems. I sliced about 3 Apricots into quarters, but used slightly less per plate.
I used about 1/2 a cup of pitted Cherries, and drizzled a 1/4 cup of the Balsamic, a generous glug of Extra Virgin Olive Oil, and a few turns of fresh ground pepper to the Cherries to create the dressing. Add more or less vinegar to taste. The combination of the Cherries, oil, vinegar & pepper are lovely!
You can buy pre crumbled Feta Cheese or buy a block kept in brine and cube to your desire. Lastly I chopped some Walnuts & Almonds for crunch & texture, but your favorite kind is always best.
Then you assemble. The Feta provides the perfect amount of salty brininess that allows all the fruits and veggies to not only shine on their own, but create a culinary ensemble that is delightful.
