
Well hello, dear meows!
I’ve been cooking up a storm this year, and this Mystic Meals creation was a huge hit. You’d think those chicken thighs would be the star of the show, but that stew took it to another level. So my focus here is to highlight the side dish that truly deserves center stage.

The chicken thighs were bone in/skin on. You can use whichever kind and cut you prefer. I marinated them in a couple of spice blends from my Mystic Seasonings brand, Mystic Shawarma, and Citrus Herb, along with lemon juice and some of the brine from the olives. I sautéed the thighs skin side down to render the fat and crisp up the skin. Then once the thighs were fully cooked, I removed them from the pan and set them aside to begin cooking the stew in the same pan to get all that yummy flavor! That’s the good stuff!
In the above video is the step by step on how the stew came together. It’s pretty fast, and very easy to prepare. I love Orzo. It’s one of those pasta’s that even though widely available, doesn’t get her flowers enough. A versatile little gem that you can get really creative with. I think next time I make the stew, I’ll pair it with fish or seafood. The whole dish was absolutely lovely!
