I love the combination of chicken with waffles. I enjoy sweet and savory flavors together. Every time I make these, they’re always a little bit different depending on what I have on hand. These are buttermilk waffles made on my trusty mini waffle maker that I’ve had for years.

Now here’s where all the yummy twists come into play. Many of the grocery stores around me sell fruits and vegetables in bulk fairly cheap. So when I buy fruit in large amounts, I always make homemade jams/preserves so I can use them in applications like this.
I made an apricot and white nectarine preserves and thinned it out with maple syrup and sprinkled in some chili flakes for some sweet heat. I was going for sweet and sour chicken vibes… 😝 And it was incredible. I sliced up the remaining nectarines really thin and gently mixed everything together.

For the chicken, I used boneless skinless thighs cut into strips. Everyone has their own way of making fried chicken so do as you always do when you make it. I had some lovely smoked paprika that I wanted to incorporate so I melted a few tablespoons of butter, added in a heaping teaspoon of the paprika to the butter, along with some parsley and a hint of cilantro and drizzled that over the chicken. The richness of the smokey butter just adds a nice flavor to the chicken and pairs well with everything nicely. The link below is just a quick glance at how I put it together.
