Rigatoni in Goat Cheese Cream Sauce.

Greetings, dear meows!

I want to thank you all for the outpouring of well wishes and support regarding the release of my debut novel, The Creepy Culinary Adventures of Nia Luna and what a week it’s been! I’m back at it with cooking & posting so I wanted to drop off this delicious pasta dish here!

The Madness… 😹

The video is just me being silly and describing the dish. I mean we all know how to make pasta one way or another. I wanted a creamy sauce and remembered that I had some groovy goat cheese that would be perfect for the rigatoni!

Yum!

I heated my pan with butter & olive oil, then sauteed onions, garlic, along with some pancetta to render out the fat and add flavor right away. Then I added a few thinly sliced baby bells mushrooms, along with some thyme & chili flakes. Once the mushrooms were nice and caramelized. I added in some chopped arugula while I was waiting for the rigatoni to be al dente before adding it to the pan, along with a few generous splashes of pasta water to deglaze and create the base for the sauce itself.

Voila!

Then I added 2 very heaping teaspoons of the goat cheese and mixed it all together to create a velvety smooth sauce. Notice that I’ve yet to mention salt. Between the pancetta, salted pasta water, and the cheese, all the flavors came together beautifully! I garnished with some chopped parsley, a few crumbles of the goat cheese and a little bit of diced roasted red peppers for a sweet note to balance it all out.
