
Well hello, dear meows!
Every now and then I lean heavily into my roots and what my ancestors are guiding me to do. In this case they were screaming at me to make some comfort food with those familiar flavors that is the base of most of my childhood and many others. I’m part Puerto Rican and most of the cuisine is gloriously Afro Caribbean influenced with herbs, spices, fruits, and vegetables that are just as unique as the people themselves.

What I’d like to focus on here are the black beans, cause lemme tell ya… It’s always the beans that pull everything in like a warm hug. I used canned beans because I have a ton of varieties to use and I hadn’t made black beans in a while. The meat is pork shoulder marinated for 24hrs in two of my Mystic Seasonings spice blends, Adobo & Sazon, along with minced garlic, lime juice, and a bit of sofrito. Then roasted to perfection till it’s fork tender.

The yellow rice is Jasmine seasoned again with Sazon and a touch of salt. And the Sweet Plantains are slow fried to caramelize the bananas without burning them since they contain a lot of natural sugar. But back to those beans. In the following video I demo how I put those babies together. Enjoy the shenanigans! 😛
And just like that, you too can make a pot of magickal black beans that’ll elevate your next Mystic Meals dinner in a flash! I mean, gimme some rice, beans, and a salad and I’m a happy meow! Add some avocado to the mix and, Olvidate!
